Stir the beans around every 30 seconds. The beans will start to make a crackling sound and will also start to smoke a little after around 4 to 7 minutes. The sugars will begin to caramelize and the beans will begin to go a yellow color.

When the beans begin to make popping or cracking noises, keep a close eye on them as they start to turn brown.

If you want a smooth coffee, almost like tea, then you can stop immediately after the first set of cracks and pops, although if you want a better taste, leave a few minutes longer, so they become much darker.

Now you should listen out for the second pops/cracks, although will be a much quieter sound. The beans will start to a much darker brown, so be careful that they don’t burn. Leave around 30 seconds after the second crack for the best results, although you can determine this yourself as you do more in the future.

Take out of the pan and place on a tray, by stirring them around on the tray, you will help the cooling process take effect, as the beans will still be roasting even when removed from the pan. Ensure the beans are spread out in an even layer and then leave outside to cool for at least 30 mins, although this time can be extended depending on your own personal preference and taste as you experiment in the future.
